All Northeastern students have had that moment when their stomachs are growling, their bank accounts are empty and the mashed potatoes and mysterious fish in Stetson East aren’t going to cut it. Instead of risking your life and eating from the container in the back of the fridge or the expired yogurts stacked on the door, here are two recipes that are sure to delight your taste buds with some ingredients that are most likely hiding in the back of your kitchen cabinet.
Chili Pretzel Crusted Chicken
Ingredients:
– Chicken cutlets
– 2 eggs
– Cup of sourdough pretzels
– 1-½ tablespoons of chili powder
– 1 tablespoon of sugar
– Olive oil
Directions:
1. Blend or crush a half cup of sourdough pretzels into crumbs.
2. Mix in chili powder and sugar to the pretzel blend.
3. Pour olive oil into frying pan.
4. Beat 1-2 eggs (depending on how much chicken you have) and dip the chicken cutlets in, then toss cutlets in pretzel blend until fully covered.
5. Place cutlets in heated frying pan.
6. Cook each side for about three minutes or until golden brown.
7. Place on paper towels to absorb extra oil.
8. Serve with your favorite side dish.
Baked Apple
Ingredients:
– 1 apple
– 2 teaspoons of cinnamon
– 2 teaspoons of sugar
Directions:
1. Preheat oven to 400 degrees.
2. Peel and core apple.
3. Sprinkle with sugar and cinnamon and put in a pan.
4. Place in oven for five minutes.
* Or heat in microwave for two and a half minutes.
5. Enjoy.
