Microwavable recipes in 15 minutes or less

Are you tight on time and/or money? We’ve decided to make things easier for you. Here are some tasty, quick and affordable recipes to help your semester go a little smoother.
For many of you, the goal is to stay awake as long as you can to finish a paper or a project, but hopefully you can squeeze in a few hours to sleep. And when you do, here is something to help your mind relax:

Dreamy Nighttime Drink

Warm milk, flavored with honey, vanilla and/or cinnamon. This beverage is rich in both calcium and antioxidants too.

Ingredients:
1 cup milk
2 drops vanilla extract
1 teaspoon honey
1 pinch ground cinnamon

Directions:
1. Pour milk into a microwave-safe cup or mug, and cook on high for about three minutes.
2. Stir in honey and vanilla, then sprinkle with cinnamon before serving.
Not really a fan of the great outdoors? No worries, we’re bringing the campfire straight to your kitchen!

Peanut Butter S’Mores
(Peanut Butter is optional)

Ingredients:
graham crackers
milk chocolate candy bar
peanut butter
large marshmallows

Directions:
1. If you’re using peanut butter, spread graham cracker square with peanut butter.
2. Add a square of chocolate and one marshmallow to the graham cracker square, then microwave on high for five to ten seconds, or until marshmallow puffs.
3. Top with another graham cracker square, and enjoy.
Fall has finally come, and pumpkin carving has started. So why not get a head start with some festive treats?

Chex Pumpkin Pie Crunch

A sweet and crunchy cereal mix snack.

Ingredients:
1/4 cup brown sugar
2 cups Chex Wheat cereal
2 cups Chex Cinnamon cereal
2 cups Chex Honey Nut cereal
1 tablespoon pumpkin pie spice
1/4 cup butter
2 teaspoons vanilla
8 ounces pecans

Directions:
1. In a small bowl, mix brown sugar and pumpkin pie spice, then set aside.
2. In a small, microwave-safe bowl, microwave butter on high for about 30 seconds, or until melted.
3. In a large microwave-safe bowl, mix all cereals and pecans, then pour butter over cereal mixture, stirring until evenly distributed.
4. Add sugar and spice mixture, and stir until cereal mixture is coated.
5. Microwave mixture, uncovered, on high for about five minutes, or until it begins to brown, stirring every minute.
6. Spread mixture on wax paper or on a cookie sheet to cool, then store in an airtight container.

Vegetarian Brown Rice Casserole

You don’t have to be a vegetarian to enjoy this delicious dish.

Ingredients:
1 can ready-to-serve lentil soup
1 large can diced, red peppers
1 cup cooked brown rice
1/2 cup shredded cheddar cheese
1 can unsalted, drained, mixed vegetables

Directions:
1. Combine soup, cooked rice, mixed vegetables, peppers and 6 tablespoons of the cheese in a microwave-safe casserole or baking dish.
2. Season with salt and pepper to your liking, then level the top of the mixture.
3. Sprinkle casserole with remaining two tablespoons of cheese, then cover and cook in microwave on high for about five minutes.
4. Uncover, and cool for about a minute before serving.

Chicken Nachos
(Chicken is optional)

Ingredients:
5 ounces unsalted tortilla chips
1 cup drained pinto beans
1 cup drained, diced tomatoes
3 ounces shredded cheese of your choice
Jalapeno peppers (optional)
1 can drained, white premium chunk chicken breast (optional)

Directions:
1. Arrange chips on a large, microwave-safe platter, then add chicken, beans, tomatoes and jalapenos.
2. Top with an even layer of cheese, then microwave on high for about three to four minutes, until cheese is melted.
