Recipe: Vegan Mug Cake

Passed down through roommates, this vegan mug cake is simple and leaves room for your creativity and pantry to make it something special. With just five ingredients and a cook time under five minutes, it’s the perfect late night treat! I’ve made this recipe more times than I’d like to admit, and I hope it can bring you comfort in times of stress or happiness in times of celebration. 

Ingredients:

3 tablespoons all-purpose flour

1 tablespoon sugar (brown or white)

1½ teaspoons baking powder

1 tablespoon oil (vegetable, canola, coconut or melted margarine)

5 tablespoons non-dairy milk of choice, 6 tablespoons if it’s a thick non-dairy milk

Mix-ins and toppings of choice (ice cream highly recommended)

Directions:

  1. Combine dry ingredients in a mug. Give them a good mix.
  2. Add oil and mix. 
  3. Slowly stir milk into the mixture until it turns into a batter.
  4. Add in mix-ins and stir again.
  5. Microwave for 1.5 to 2 minutes. 
  6. Add any toppings and wait a few minutes to cool.

Suggestions for mix-ins:

Chocolate or white chocolate chips

Cinnamon or cinnamon sugar

Vanilla extract

Nut butter or cookie butter

Sprinkles
